Chunk O'Cheese Meatleaf

Ingredients
1 ½  LB ground beef
¼ LB (4 oz.) fresh mushrooms, chopped
1 med. onion, chopped
¼ cup minced parsley
¾ cup dry bread crumbs
1 egg
1 ¼ tsp. salt
¼ tsp. pepper
¾ cup milk
8 oz. extra sharp Cheddar cheese
 

  1. Blend meat with chopped mushrooms, onion, parsley, bread crumbs, egg, salt, pepper and milk until well blended
  1. Dice cheese into ½ inch cubes.  Blend into meat mixture (by hand) making sure to distribute the cheese chunks evenly.
  1. Pack into a 9-by-5-by 3 inch loaf pan.  Bake at 350 degrees for 1 and a half hours.  Pur off liquid.  Cool slightly before cutting.
