Pierogie Lasagna

Ingredients
8 oz. lasagna noodles, cooked according to package
1 large onion, diced
Parsley flakes
8 oz. sharp cheddar cheese, grated
4 cups mashed potatoes (I use the Country Crock tub)
4-6 tablespoons of butter
Salt and pepper to taste

  1. Set cooked noodles aside
  2. Brown butter in a medium skillet being careful not to burn
  3. Add the onions and saute until softened and lightly browned
  4. Combine the cheese and mashed potatoes.
  5. Butter or spray a 13 x 9 baking dish
  6. Line the bottom layer with noodles
  7. Add a layer of potato and cheese mixture then spread with a portion of the onions
  8. Continue to layer the ingredients ending with a layer of noodles topped with onions.  Sprinkle with a little dry parsley flakes.
  9. Bake covered at 350 degrees for 15 to 20 minutes, or until bubbly and lightly browned.
